Guilt-Free Macaroni & Cheese

In an effort to eat a more nutritious diet, I’ve discovered Greek yogurt is a fantastic substitute for sour cream and butter in sauces without losing the creamy goodness. We serve with a garden salad for a healthful, satisfying dinner.
1 c. whole-wheat macaroni, uncooked
⅓ c. plain non-fat Greek yogurt
1 t. garlic powder
1 t. onion powder
1 t. dry mustard
Optional: ¼ t. cayenne pepper
1 c. shredded reduced-fat Cheddar cheese
salt and pepper to taste
¼ c. whole-wheat panko bread crumbs
¼ c. grated Parmesan cheese
Cook macaroni according to package directions, just until tender; drain and transfer to a bowl. In a cup, mix yogurt and seasonings. Spoon yogurt mixture over cooked macaroni. Stir in Cheddar cheese; season with salt and pepper. Transfer mixture to an 8"x8" baking pan sprayed with non-stick vegetable spray. Top with bread crumbs and Parmesan cheese. Bake, uncovered, at 425 degrees for 10 to 15 minutes, until heated through and golden on top. Makes 2 to 4 servings.
